炎热夏天,来一盘风味香辣凉粉吧。

1132 风味香辣凉粉用料:

1:纯绿豆淀粉1/3杯。水2又1/3杯,搅拌均匀。

2:橄榄油2茶匙,蒜末2茶匙,葱花1大匙,姜末1茶匙,盐1/2茶匙,糖1/2茶匙,鸡粉1/4茶匙,万字牌生抽酱油2大匙,风味香辣酱1大匙(风味香辣酱做法见风味香辣酱

3:菱粉1/2茶匙加水1大匙拌匀,香油1大匙。

做法:

纯绿豆淀粉是这样的(图A)。中号饭锅,置炉上开大中火,内放1料(图B),边搅拌边煮开至半透明(图C),离火冷凉。凉透的凉粉,用刀把周边划一圈,倒出切细长条放入碗内。

不粘锅置炉上开中小火,放入2料里的油,炒香葱花,姜末和蒜末(图D),依次放入剩余2料,煮滚后加3料生粉水(图E),搅拌煮至微滚,离火放入香油拌匀,将汁浇到凉粉上即可。
