【Braised Bean Curd with Fava Beans】
Bean curd, a.k.a firm tofu, is one of the endless ways to prepare tofu dishes for healthy eating. Our parents made many tofu dishes when we were young, because meat was scarce and expensive. Now we enjoy tofu for a totally different reason. It is amazing how food brings back memories and connects people. I guess that is why I like to spend endless hours in the kitchen.

Serves: 6 servings
1) 1 package bean curd 400g;
2) 665g fava beans in the pods;
3) 1.5 tbsp olive oil, 1 green onion, 2-3 ginger slices, 3-4 cloves garlic, 1 anise star, 2 cloves;
4) 2 tsp cooking wine, 3/4 cup water, 2/3 tsp salt, 1.5 tsp sugar, 1 tsp dark soy sauce, 2 tsp light sauce, ¼ tsp chicken broth mix;
5) 1/2 tsp sesame oil .
1: Rinse bean curd under cold water and pat dry. Cut into thin slices (Picture 1). Open the fava bean pods and remove the beans. Shell fava beans again by breaking through shell at the dimpled point using your thumb nail then popping it out. Fully shelled fava beans are bright, emerald green with a tender texture. They are one of my favorite vegetables. Only 1 cup fava beans were yield (Picture 2). Rinse fava beans under cold water and drain well.
2: Cut green onion into 1-in lengths and crush garlic. Heat 1.5 tbsp olive oil in a non-stick sauté pan over high heat. Sauté green onion, sliced ginger and crushed garlic for a minute (Picture 3). Add anise star and cloves and mix well.
4: Turn heat to high with lid open, and continue to cook until the sauce thickens. Add sesame oil, stir to mix then transfer to a serving plate.
