【Orange Chiffon Cake】

We bought a box of oranges at Costco, very juicy and sweet. Used its juice to make this chiffon cake, not only smell nice, but very soft and moisture. Two key steps that you need to know for making a perfect chiffon cake.

Ingredients:
1: 1 orange, squeezed to obtain 4 tbsp juice;
2: ½ cup cake & pastry flour (75g), 1/3 tsp baking powder, mix well;
3: 4 extra large egg whites, 1/2 tsp white vinegar or 1 tsp freshly squeezed lemon juice, ¼ cup fine sugar (52g);
4: 4 extra large egg yolks, 2 tbsp sugar (28g), 2 tbsp avocado oil (27g);
Other:
22×22 cm baking dish or 8” round cake mold.

Preheat oven at 340F.
1: Prepare the orange juice first, cut orange in half and squeeze out 4 tbsp juice, set aside. Mix flour and 1/3 tsp baking powder in a bowl, set aside. Make sure the container for beating egg whites clean and dry.
2: Beat egg whites with 1/2 tsp white vinegar or 1 tsp freshly squeezed lemon juice using an electric mixer on high speed until soft peaks form. Then add ¼ cup sugar and beat until stiff, about 3-4 minutes, set aside.
3: Beat egg yolks with 2 tbsp sugar, 2 tbsp oil and 4 tbsp orange juice with the electric mixer on high speed for about 30 seconds. Add flour mixture of Ingredient 2) and beat at low speed until all combined, then at high speed for a minute.
4: Add 1/3 of the beaten egg white into the yolk and flour mixture and mix well with a spatula. Then pour it back to the remaining 2/3 beaten egg whites. Fold with a spatula to mix very well. See the video on folding techniques.
5: Pour batter into a 22×22 cm Pyrex baking dish or 8 inch cake mold, smooth the top. Bake in the preheated oven at 340Ffor 33 minutes.
6: Cool the cake upside down for 20 minutes. When cooled, use a knife to loosen sides and loosen the bottom with a silicon knife. Take out the cake, then cut into 16 pieces before serving. Store leftover cake in an air tight container at room temperature for 2 days or in fridge for up to 5 days.

Ingredients:

Wrappers:
1) 1 cup unsifted all purpose flour (160g), 1/3cup+1tbsp water, 1 tsp avocado oil or other cooking oil;
Filling:
2) 1 piece tofu 175g;
3) 300g frozen wild scallops;
4) 3 tbsp chopped green onion, 1 tbsp sesame oil , 1/2 tsp salt, 1/6 tsp ground black pepper, 1/6 tsp chicken broth mix;
5) 1 tbsp premium soy sauce;
Others:
6) 1.5 tbsp avocado oil or other cooking oil;
7) 3 tbsp water;
8) 1 tsp chopped green onion.

1: Measure out flour into a medium sized bowl, add the water in the ingredient 1) and combine to form a dough (Picture 1). Add 1 tsp oil and continue kneading until the dough is smooth and elastic, about a few minutes (Picture 2). Cover with a damp cloth or food wrap and let it stand for 30 minutes.
2: Rinse tofu and dice into 0.5 cm cubes (Picture 3). Place frozen scallops in cold water to thaw, rinse, drain and cut to small pieces. Place tofu, scallops in a bowl, add all ingredients of Ingredient 4-5), gentle mix well with a spoon (Picture 4).

3: On a floured working surface, shape the dough into a log about 1 cm diameter. Cut into 20 equal sized portions. Press with your palm to flatten them. Roll out each disc into a 9-10 cm circle (Picture 5). Place 1 tablespoon filling in the middle of each wrapper. Press the center edges to seal, then seal completely both sides (see the video for details). Brush the 【AirGo】cooker pot with 1.5 tbsp oil, and arrange the potsticker inside (Picture 6). Please the pot back inside the 【AirGo】cooker.
4: Plugin the 【AirGo】cooker, use “Function” to select the “Base Heat” program, set temperature to 420F and time to 26 min. press “start” to initiate the program. After cooking for 11 minutes, open the lid and add 3 tbsp water and close the lid to let the program continue.
5: When the program ends, open the lid, scatter some chopped green onion for decoration. Transfer cooked potstickers to a serving plate and serve warm.

鸡肉生煎包Pan Fried Chicken Buns

In recent years, it is recommended to eat more high quality white meat, such as seafood and chicken breast, for a better health. Therefore, this dish of Pan Fried Chicken Buns is presented. Very tender and delicious filling, soft top and crispy bottom will make you reaching for one after another.

Ingredients:
Leavened dough:
1) 2 cups unsifted all-purpose flour (not sifted, 640g), 2 tsp baking powder;
2) 2/3 cup lukewarm water +2.5 tbsp (200g), 1/4 tsp sugar, 1.25 tsp fast rising yeast, mix well and stand for 5 minutes;
3) 1 tbsp avocado oil or other cooking oil;
Filling:
4) 500g skinless and boneless chicken breast;
5) 5 small shallots (215g);
6) 2 stalks green onion finely chopped, 1.5 tsp freshly minced ginger, 1/2 tsp salt, ¼ tsp ground black pepper, 2 tsp corn starch, 1 tbsp sesame oil; 1 tbsp dark soy sauce, 1 tbsp premium soy sauce, 1/3 tsp chicken broth mix, cold water 3-tbsp;
Others:
7) 2 x 1 tbsp avocado oil or other cooking oil;
8) 2 x ¾ cup (2 x 180g) water;
9) 2 x 1 tsp roasted sesame seeds, 2 x 2 tsp finely chopped green onion, optional.

1. Dough: Measure flour and baking powder in a medium bowl and combine well. Mix all ingredients of Ingredient 2) in a bowl and let stand for 5 minutes. Pour the yeast water mixture into the flour bowl, and combine to form dough. Add 1 tbsp corn oil, and knead for a few minutes (Picture 1). Cover with a damp cloth and set aside in a warm place until it doubles in volume.
2: Filling: Remove old skin of shallots, rinse with water and then chop finely, finely chop the green onions as well (Picture 1). Dice chicken breast finely (Picture 2) and combine all ingredients of Ingredient 4) to 6) in the a bowl (Picture 3) and stir in one direction for 3 minutes with a pair of chopsticks or a wooden spoon until the mixture is sticky (Picture 3).

3. Gently knead dough a few times then divide into 2 equal portions. Shape each into a 2-cm diameter log and cut into 8 discs. Press down each disc and roll out into a 10 cm wrapper. Place 2 tbsp filling in the middle of a wrapper. Fold up along the edge to form pleats and pinch together to form a bun (See the video). Repeat to finish the rest of dough and filling.
4: Place 8 buns inside a non-stick sauté pan which is already coated with 1 tbsp oil, cover with a lid. Other buns on a parchment paper lined baking sheet. Cover with plastic wrap. Let buns rest for 30-60minutes in a warm place until volume increases by 50%.
5: Add about 3/4 cup of cold water to the pan. Cover the lid (Picture 5) and bring to a boil over high heat. Keep an eye and when water almost evaporates (about 4 minutes), reduce to medium-low heat (3) and cook for another 2 minutes. Then reduce to low heat and cook for 2 minutes.
6. Remove from heat, wait for 2 minutes and open the lid. Scatter evenly 1 tbsp roasted sesame seeds and 2 tsp chopped green onion. Transfer to a serving plate and serve warm. Yummy!!.
