【豆腐花】

回国在淘宝网上买到了葡萄糖酸内酯,正好最近又得了个新款的九阳豆浆机DJ13U-D08SG,就做了这个豆腐花。用内酯做出来的豆腐花能提高保水率,更细腻滑嫩,口感好。
1:黄豆1/2杯(90克),冷水2杯;
2:冷水3.5杯;
3:葡萄糖酸内酯1/4-1/3 茶匙,冷开水或瓶装水1.5大匙;
4:4×1大匙蜂蜜。
注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。
做法:
1、晚上睡觉前将黄豆淘洗干净,加2杯冷水泡过夜。第二天早晨,用清水冲洗后,沥去水。将黄豆放入豆浆机里(图1)。然后加入3.5杯冷水。
2、加盖按下选择键(Select),选湿豆原磨(Soaked bean),启动程序(图2)。整个过程25多分钟。在等待的过程中,将3料的葡萄糖酸内酯(图3)放入一干净大碗里,加水1.5大匙溶解(图4)。等豆浆磨好煮好后(听到鸣叫声),打开盖子(图5)。
4、过滤好的豆浆趁热倒入盛内酯水的大碗中(图8),让它静置25分钟,就凝成豆腐花了。
5、豆腐花分装到4个小碗中,每个碗中加1大匙蜂蜜,就可以开吃了。
